Romanesco cauliflower is a vegetable that falls somewhere between broccoli and cauliflower. It has been grown in Italy since the 16th century. The flavor is closer to cauliflower than broccoli. The vegetable is most known for its striking appearance with a chartreuse green colour and natural fractal pattern. Each bud is composed of a series of smaller buds, all arranged in continuing descending logarithmic spirals.
